An interesting illustrated article on preserving from America. The standard Kilner screw top jars are safe for fruit and have been used in the UK since 1870 in various forms but the "pop top" jars refered to are the Kilner Dual Purpose or the new German jars I sell with rubber/metal lids.

I was asked by someone if I knew anything about bottling using a microwave. I had never seen this method mentioned and I received the following e mail from Paul and Jenny having tried it out for themselves. I give no guarantees but this is the method used.
Hi Peter
The following may be of interest to you and your Kilner followers.
We have spent most of today bottling over 100lbs of plums. After deciding that the oven method would take forever and after searching the internet, including your e-mail we experimented with the following method with some considerable success.
Using 2lb or similar jars:
1. Dry pack to top with fruit.
2. Microwave at half power until fruit is cooked but slightly under cooked.
3. Make up syrup as per Kilner instructions.
4. Add to fruit - must be boiling or as hot as possible (possible safety risk!!!)
5. Cook for further 1 minute at full power or just short of boil over point.
6. Remove, add sealing rings and tops (or metal top) and screw down immediately.
7. Allow to cool in normal way and check for good seal.
We have also used larger and smaller jars varying the times accordingly. We have not tested for flavour and longevity of product but will keep you informed.
